As early as Lafontaine explained in fable ” The Ploughman & his children ” : the man has to work hard if he wants that the ground returns his treasures. The vintage 2007 follows the moral of this fable. Actually, the combining of green harvesting, deleafing, eliminaton of the side-shoot & spreading of the bunches associated to prophylactic measures & sustainable treatments will permit the optimization of the grapes maturation. Besides the indian summer is there, the climatic conditions ( no humidity, temperate heat & fresh wind ) let us predict the possibility to harvest later. So we will start the 24 of september 2007 in order to pick up the fruits of our work. Finally with ” good grapes “, we have confidence in our know-how to vinificate a good vintage 2007.
